Vadai Ingredients:

1. Urad dal – 4 cups
2. Onion – 2 (finely chopped)
3. Green chillies – 8 or to taste (finely chopped)
4. Ginger – small piece
5. Curry leaves – few
6. Asafoetida - a pinch
7. Salt – to taste
8. Oil – for deep frying

Vada Preparation:

Soak urad dal for 2 hours. 

Grind onion, green chillies along with urad dal without adding too much water.

The batter should be finely ground.

Add ginger, curry leaves, coriander leaves and salt to the batter.

Mix well.

Heat oil in a pan.

Dip your hands in water and form a lemon size ball of batter and flatten it with your palms on a plastic sheet to form a round shape.

Make a hole in the centre with your finger.

Drop the flattened balls into the oil and fry until it turns into golden brown colour.

Drain the excess oil.

Serve hot with coconut chutney or sambar.
