Ingredients:
1 carrot
3 tbsp tomato puree
2 tbsp soya sauce
1 tbsp cornflour
1 flake garlic
Salt to taste
2 tbsp Sugar
2 tbsp vinegar
2 tbsp oil
150 ml stock or water
For The Rolls
4 large eggs
2 cups egg noodles
? of 1cabbage
Oil for frying
Water as required

How to make Sweet Sour Egg Roll:
- Grate the carrot.
- Crush the garlic.
- Shred the cabbage.
- Make the sauce first. Mix together the stock, garlic and all other ingredients except carrots. Bring to a boil stirring constantly. Add the carrot and simmer for 5 minutes.
- To make the filling, cook the noodles in salted boiling water for 10 minutes. Drain well and deep-fry in hot oil till golden brown and crisp. Fry the shredded cabbage separately, stirring constantly after frying, mix the crisp noodles and fried cabbage.
- Now beat each egg separately with 1 tsp water. Then fry each egg with a little oil to make 4 omelettes. Place them on a serving dish. Place the cabbage noodle mixture on it and roll it. Pour the sauce over this and serve hot.
